Soulful Sattvik Coconut Curry

Ingredients
For the Curry
Carrots - 1 cup (Red winter carrots are especially recommended for their sweet flavor and vibrant color)
Cauliflower - 1 cup
Sweet Potato - 1 cup
Peas - 1 cup
Unsweetened Shredded Coconut - 1 cup
Ghee – 1 tablespoon
Cumin Seeds - 1 teaspoon
Asafoetida – 1/2 teaspoon
Mt. Meru Medicines' Lakadong Turmeric - 1 teaspoon
Curry Powder - 2 teaspoons
Ginger - 1 inch piece, freshly grated
Salt - to taste
Fresh Cilantro - ¼ cup, chopped (for garnish)
Lemon Juice - 1 tablespoon
Tofu - 2 cups
Jaggery Powder - ½ teaspoon
Homemade Coconut Milk
Add 1 cup of grated coconut and 2 cups of water to a blender and blend until smooth. The smoothie setting on a Vitamix works perfectly for this.
Tofu Preparation
Cut the tofu into cubes
In a bowl, add 1 teaspoon of oil and coat the tofu pieces evenly
Air Fryer Method: Cook for about 12 minutes, pausing at 6 minutes to turn the tofu over
Oven Method: Bake at 450°F for about 20 minutes
Method
Prepare Vegetables: Wash and dice carrots, cauliflower, and sweet potatoes into equal-sized cubes for even cooking.
Tempering: Heat ghee in a deep pan. Add cumin seeds. Once they start to sizzle, add asafoetida and Mt. Meru’s precious Lakadong Turmeric.
Aromatics: Add grated ginger, sautéing until fragrant (about 30 seconds).
Vegetables: Add diced vegetables and stir well to coat with the tempering spices.
Spices: Sprinkle the curry powder, mixing gently to coat the vegetables.
Simmer: Pour in coconut milk, add salt, and bring to a gentle simmer. Cover and cook on low heat for 15-20 minutes until vegetables are tender but not mushy.
The 6 Tastes: Add ½ teaspoon of jaggery at this stage to balance the flavors according to Ayurvedic principles.
Finish: Garnish with fresh cilantro leaves and a squeeze of lemon juice.
Serving Suggestion
Serve this nourishing curry with steamed basmati rice. The balanced combination of sweet vegetables with creamy coconut creates a sattvik meal that nourishes both body and spirit.
Allow this dish to rest for 5 minutes after cooking to let the flavors fully harmonize before serving.
